FROM THE DUKE’S TABLE TO YOURS
Step into The Waffle Duke, and you step into a living story that began in 1430, when Bruges was at the height of its power—a glittering capital of commerce and courtly life. Ships from distant lands crowded the harbor, unloading spices, silks, and treasures at the great Waterhalle, just around the corner from where we stand today.


ROYAL WEDDING
That year, Duke Philip the Good wed Isabella of Portugal in a celebration that lasted for weeks. Among the wedding gifts was a beautifully crafted waffle iron, a symbol of generosity, hospitality, and the sweet pleasures of life. Three days later, the Duke founded the Order of the Golden Fleece, a circle of 24 knights bound by loyalty and honor.

We imagine the Duke—still in the glow of wedding festivities—walking the streets of Bruges, following the scent of batter crisping on hot iron. Perhaps he stepped inside the home of the Lenaert family, who lived here centuries ago, and shared a plate of waffles with friends and strangers alike.

That spirit of warm welcome and shared indulgence lives on today. The Waffle Duke is built on the belief that great food begins with the ingredients we choose. Whenever possible, we buy locally from trusted farmers right here in the Bruges region. Including our strawberries and the beef for our stew. Ensuring that every waffle is made with the freshest produce and the finest regional flavors.
Our menu is rooted in that heritage
We focus on two iconic styles

Liège Waffle
A Liège waffle is a rich, indulgent Belgian specialty made from a dense, brioche-like dough rather than a liquid batter. Studded with pearl sugar that caramelizes during baking, it develops a golden, slightly crisp exterior with pockets of molten sweetness, while remaining soft and chewy inside. Irregular in shape and deeply aromatic with notes of butter and vanilla, it is typically enjoyed warm, often on its own, as a naturally sweet and satisfying treat.

Brussels Waffle
A Brussels waffle is a light and elegant Belgian classic, crafted from a smooth batter that yields a crisp exterior and an airy, delicate interior. Recognizable by its large, rectangular shape and deep pockets, it servers as the perfect canvas for refined toppings such as fresh fruit or savoury toppings such as Mozzarella or Salmon. Less sweet than its Liège counterpart, it is prized for its subtle flavor and refined texture, offering a balanced and sophisticated waffle experience.

Really delicious sweet and savoury belgium waffles! The savoury waffle was more airy than the sweet. Both were delicious - we got a beef stew one and a classic belgium chocolate. The decor inside is really quaint and cosy too.

Excellent waffle spot. Highly recommend over the touristy ones nearby. It’s cheaper, the quality is better, and you can sit down. I got one of the savoury waffles and the balance of flavours was on point! Also lovely staff and atmosphere. Possibly the best waffle spot in Brugges.
